Shin Cheng Farm carries a quiet magic all its own.. I met Huayin at the Taiwan Tea Expo on my recent trip. The main focus of this trip was to find high quality Dong Ding Oolong and other aged roasted Oolongs. Shin Cheng farm stood out among a sea of Taiwanese tea producers in the wild chaos of the Tea Expo. With a Focus on Dong Ding Oolong with a few exceptions like the Yan Yun: Wuyi Yancha. It was apparent that they took the production of these teas seriously. He had teas from two different gardens, we tried most of the teas he offered and they all were quite special but their offerings from the Wild Forest Phoenix Secret Realm stood apart.
This rare, 40-year-old garden grows in a truly natural way — trees stretching tall, rooted deep in mountain soil, every leaf hand-picked. Multiple cultivars live side by side here — Qingxin Oolong, Da Ye Oolong, Ruanzhi Oolong, Jin Xuan Oolong, and Phoenix Native Camellia — creating a tapestry of flavor impossible to imitate. The result is a tea that feels both ancient and alive, carrying the breath of a forest that has been quietly tended for decades.
Yan Yun is their homage to Wuyi-style oolong. While not grown in the Wuyi mountains of China, it reflects many of the qualities beloved in that lineage: a clean mineral finish, a refreshing and lingering aftertaste, and a depth that unfolds gracefully over many steeps. It is smooth, grounding, and richly layered — a tea that invites you to slow down and meet each cup with presence.
